Rice is the main ingredient in most Vietnamese cuisine. It is eaten steamed or fried, made into rice paper, rice noodle – flat, vermicelli, glass, - rice cake, glutinous rice, balled, folded, creped, porridge and so on. For breakfast rice noodle soup is served followed by rice again either in its original form or otherwise with an assortment of side dishes for lunch, tea and dinner.

In spite of all the rice and noodles in their food, Vietnamese food is light to the stomach and to the palate. Flavours are subtle and delicate as the use of spice is minimal, whilst the heat of the chilli is replaced with a smidgen of pepper, and coconut milk rarely used. Perhaps, only the fried rice can be regarded as a single heavy meal.

Served all at once, the typical Vietnamese meal will consist of a plate of rice or noodle, to be eaten with a bowl of soup that consist of vegetables with a choice of meat or seafood, salad or stir fried vegetables, and at least two protein dishes followed by fresh fruit for dessert. The wealthier you are, the more meat dishes you will eat.
